Jamaican Jerk Chicken

Jerk Chicken
5 lbs chicken leg quarter
4 stems fresh thyme
2 stark of scallions
1 onion
2 cloves garlic
A few pimento seeds(10)
1 tsp. all purpose seasoning(adobo)
1 tsp. garlic powder.
1 tsp. onion powder
1 tsp. sazon
1 tsp. black pepper
1/3 tsp. salt( I prefer sea salt)
1/3 cup of lemon juice or vinegar
1 plastic/latex glove
1tbsp. of Walker’s Wood jerk seasoning sauce
½ cup of water
Use vinegar or lime juice to wash and clean the chicken and get rid of excess fat. Cut the chicken into desired size or leave as is. Cut up herbs and vegetables. Using a fork, poke several holes all over meat Add herbs and all powdered seasonings and rub on meat. Add 4 tbsp of WALKERS WOOD jerk seasoning to ½ cup of water, mix and pour over meat rub into meat. (let sit and marinate in fridge for 1 hour) heat your grill or oven(350-400 degrees) Remove the fresh herbs from the chicken with fork and place on grill or in oven at (350-400 degrees). Grill until brown then flip to other side to ensure the bottom half gets done. Serve with rice, salad, bread or and fried plantains.
