Oxtails
Ingredients
2.5 lbs oxtail
¼ cup of cooking oil
1 large onions sliced
1/2 tablespoon allspice,(adobo, sazon, salt and pepper, onion powder, garlic powder seasoning)
2 cloves garlic- crushed, sliced or diced
1 medium tomato -chopped
2 stalks green onions (scallions) finely chopped
1 sprig thyme-chopped
1 can butter beans
2-3 cups of Water, as needed.
2 table spoon of browning
2 dashes of maggi seasoning sauce
2 tablespoons of honey teriyaki marinade sauce
1 scotch bonnet or habaneros pepper chopped
a few pimento seeds (10)
Preparation 1. Remove excess fat. 2. Wash with lemon juice or vinegar and water 3. Add all the seasoning above and let marinade for at least 30 minutes 4. Shake off the excess seasoning but do not discard 5. Pour oil in saucepan and add pieces of oxtail when oil is hot 6. Remove when both sides are brown. 7. Place oxtail in cooking pot, add some of the powdered seasoning to the water, with 1 table spoon of browning and 2 dash of maggi seasoning sauce to the water. Water should barely cover the meat. Cover and simmer for approximately 1 1/2 hours or until oxtail is almost tender. 8. Add butter beans( beans only…you can discard its water or add it if your gravy is extremely low. 9. Cover and simmer for 20 to 30 minutes. 10. Add all the previously used seasonings that has been sitting on the side and add a bit more of the powdered seasonings. Add a bit more warm or hot water if necessary. 11. Let simmer for additional 10 minutes 12. Have it your way! Note: Consider using a pressure cooker to reduce the cooking time.
