Tripe and beans

INGREDIENTS:

 

2 lbs tripe

1 Can Broad Beans, drained

2 onions, chopped

2 stalks escallion, chopped

1 sprig thyme

2 tablespoons curry powder

2 tomatoes, chopped

Hot pepper

Black pepper

 

Carefully wash tripe with lemon juice or vinegar then cut into small pieces.  Bring to a boil until tripe is tender.( approx about 2 hours) or use a pressure cooker for about 20-30 min. Add the onions, escallion, thyme, curry powder, hot peppers and black pepper. Add water if necessary. Continue to simmer for about 6-8 minutes without the top of pressure cooker on. You can simply remove the pressure ball or use regular pot. Then add the broad beans and simmer for an additional 10 minutes. Gravy should thicken.

 

Best served with steamed white rice.
